Shanxi Food
Shanxi cuisine which is derived from the native cooking styles of the Shanxi region in China, is famous for its noodles, fried flatbread (da bing), lamb soup and the sour taste with its locally produced vinegar. It is similar to the Huaiyang cuisine, but the flavor is totally different.
Meanwhile, one of the most popular meat supplies in Shanxi is lamb, and some other parts of the body of a goat or sheep. The locally popular lamb soup is usually cooked with livers, stomach, and some other organs from a lamb. Furthermore, as a traditional area with strong cultural connections with early Northwest Asian nomadic nations and minorities, cuisine of Shanxi is very different with other areas in China, such as they use ground lamb and carrots as a common kind of dumpling filling, while in other areas has not yet been found. Also, blending ground pork with chopped dill is another kind of popular dumpling filling enjoyed by locals.
